Veggie of the week: English Cucumber pt. 3

– Choose a cucumber that is bright green and firm.
– Store your cucumbers in the refrigerator.
– Before use, wash thoroughly to remove any dirt and residue.

Confetti Cucumber Salsa

Confetti Cucumber Salsa
(Makes approximately 2 cups)

1 large cucumber or 2 small cucumbers, seeded and finely diced
1/4 cup finely diced red onion
1/4 cup finely diced red, orange, or yellow bell pepper
2 tablespoons chopped fresh mint
1 tablespoon rice wine vinegar
1 tablespoon olive oil
1/4 teaspoon salt
1 teaspoon minced jalapeño (more to taste)

1. Place all of the salsa ingredients into a medium bowl, and gently stir to combine. Taste and add more jalapeño if you desire more heat. Keeps for several days, covered and chilled in the refrigerator.
Perfect for serving with grilled chicken or seafood.
