Selection and Storage:
– Ripe mangoes give off a distinctive sweet smell
– Pick mangoes with skin free of bruises or cuts
– Unripe mangoes can be kept at room temperature for a few days kept covered in paper towel
– Ripe fruits should be stored in the refrigerator but bring back to normal temperature when the fruit is to be eaten to get the best taste and flavour
Mango Salsa
Makes 8 servings
Ingredients:
1 mango – peeled, seeded, and chopped
1/4 cup finely chopped red bell pepper
1 green onion, chopped
2 tablespoons chopped cilantro
1 fresh jalapeno pepper, finely chopped
2 tablespoons lime juice
1 tablespoon lemon juice
Directions:
1. In a medium bowl, mix mango, red bell pepper, green onion, cilantro, jalapeno, lime juice, and lemon juice. 2. Cover, and allow to sit at least 30 minutes before serving.
